Boiled bacon & cabbage

Serves 4
- 2.5lb/1.135kg joint of bacon or gammon
- 1 whole green cabbage
- 4-6 peppercorns
Method
- Place the joint in a pot & cover with cold water.Add the whole peppercorns & bring to the boil
- Remove the scum that floats to the surface
- Cover & simmer for 1 1/2 hours(or 30 minutes per pound)
- Cut the cabbage into quarters & add to the pot
- Cook gently for about 30 minutes or until the cabbage is cooked to your liking(test constantly-don't overdo it!)
- Drain & serve with potatoes boiled in their jackets & mustard
