Boiled bacon & cabbage

Boiled bacon & cabbage

 

Serves 4

  • 2.5lb/1.135kg joint of bacon or gammon
  • 1 whole green cabbage
  • 4-6 peppercorns

Method

  1. Place the joint in a pot & cover with cold water.Add the whole peppercorns & bring to the boil
  2. Remove the scum that floats to the surface
  3. Cover & simmer for 1 1/2 hours(or 30 minutes per pound)
  4. Cut the cabbage into quarters & add to the pot
  5. Cook gently for about 30 minutes or until the cabbage is cooked to your liking(test constantly-don't overdo it!)
  6. Drain & serve with potatoes boiled in their jackets & mustard
