Beef Wellington with Red Wine Sauce (Min 2kg) Serves 8-10
Our amazing handmade mouth-watering Beef Wellington is lightly brushed with mustard and wrapped in Parma ham, then coated with a mushroom duxelle (chestnut and shitake mushrooms sautéed with finely diced echelon shallots in butter and reduced with vermouth and flavoured with tarragon and thyme and seasoning). We then encase in Rooks homemade puff pastry. Simply delicious!
Easy to cook - just defrost thoroughly in the fridge and then pop into a fully pre heated hot oven 220 degrees centigrade for 30 mins (rare), 45 mins (medium rare), 60 mins (well done). Serve with our homemade madeira and port wine sauce.
