We love this deliciously light summer lunch recipe from Jamie Oliver and thought we'd share it with you.


Why not try it using our skinless, boneless chicken breast fillets, so easy to cook! The full recipe can be found on the Jamie Oliver Website.


  • 4 chicken breasts
  • olive oil
  • 5 fresh red chillies
  • 6 cloves of garlic, finely sliced
  • 1 bunch of basil, leaves picked and stalks finely chopped
  • 3 x 400 g tins of chopped tomatoes
  • 10 black olives, destoned
  • 600g mixed ripe tomatoes, roughly chopped
  • 2 tablespoons small capers
  • A couple of handfuls of rocket
