This chicken pie by Jamie Oliver includes plenty of vegetables, herbs and chicken all topped with a crispy pastry and bursting with flavour.

Ingredients

  • Chicken legs, bone in , (about 1Kg total weight)
  • 3 large leeks
  • 1/4 teaspoon peppercorns
  • 1 bay leaf
  • 2 tablespoons olive oil
  • 2 sprigs of thyme
  • 90 g cooked ham, shredded
  • 200 ml crème fraîche
  • 4 teaspoons gluten-free cornflour (or regular)
  • 400 g gluten-free plain flour , plus extra for dusting (or regular flour)
  • 1 teaspoon salt
  • 50 g mature cheddar , grated
  • 200g butter , chilled and cut into cubes
  • 1 large free range egg
  • 2 tablespoons gluten-free wholegrain mustard (or regular)
  • 2 tablespoons crème fraîche (from the 200ml)
  • 1 large free range egg yolk , beaten with 1 tablespoon of water, to glaze
