Ingredients

  • 1kg Venison
  • 50g Butter - Melted
  • 1 Small Celeriac
  • Sea Salt
  • Freshly Ground Black Pepper
  • 500ml Double Cream
  • 1 clove of garlic - peeled and finely chopped
  • ½ a small bunch of fresh sage - roughly chopped
  • 100g Freshly grated Parmesan Cheese
  • 10 Juniper berries
  • 3 Sprigs of Fresh Rosemary
  • Olive Oil
  • 1 Bulb of Garlic - Unpeeled and Smashed
  • A wineglass of good quality red wine
